The Dept. of Hotel Management, SRM University,
Kattankulathur, organised a demonstration on chocolate making and plating
techniques. Chef Joachim Vijayan Odgen from Western Institute of Technology,
Taranaki, (WITT), New Zealand along with Carol Joy Allen, marketing manager,
held the session.
The participants had hands on experience on the art of
presentation and designing.
Speaking on the occasion, D Anthony Ashok Kumar, Director,
Hotel Management, SRM University, said that the demonstration was aimed to encourage
students on new techniques and designs in confectionary. This will help
students to understand the changing trends of food preparation and
presentation.
He further said that the food and hospitality industry was
constantly changing and the demonstration was to encourage students to
understand and cope with global trends. He added that SRM University tied up
with WITT and many other international institutes to conduct more such
programmes and impart skill sets to the students in order to prepare them
according to the needs of the industry.
